We bade farewell to Chef Tim de la Cruz last 24 May as he boarded the plane bound for Cebu City. maynila’s featured chef for the Noche Buena popup last December 2015 is now Head Chef for Jason Atherton’s first restaurant in the Philippines, The Pig and Palm. This 57-seater restaurant will open in Cebu City’s MSY Tower in mid 2016. It will be the 16th restaurant for The Social Company, Atherton’s restaurant group.
Chef Tim will be creating tapas-style modern European dishes with a Filipino twist. A sample of his dishes include “lechon de leche with spiced pork-fat roasted carrots and herb dressing” and “pulled pork burgers with spiced tomato chutney and avocado”. The addition of The Pig and Palm is set to raise the bar of the Philippine dining scene.
