We had the good fortune of visiting Bale Dutung during my last visit to the Philippines in December 2015. We couldn’t have done it without my good friend and school mate, CJ Juntereal who introduced us to Chef Claude Tayag and his lovely wife Maryanne at their home.
Bale Dutung has hosted many international chefs and food writers from around the globe like Anthony Bourdain and Tom Parker-Bowles, to name a few.
